

One of my favourite foods to prepare is salmon. My first try pan frying salmon was a huge success thanks to this post by serious eats.
Notes on preparing salmon:
—Keep salmon dry, the less water the better.
—Keep oil in pan well hot to avoid salmon from sticking to pan.
—Press onto salmon during the first 1/2 minutes of frying for even cooking.

Lauren’s Famous Apple Juice Chicken
Ingredients—Chicken breast, Apple Juice, Salt& Pepper, Ginger Ground, Chilli Flakes.
Pour Apple Juice over skillet with medium heat, place chicken strips and sprinkle spices. Allow apple juice to reduce, occasionally flipping chicken strips. Cook for about 45 minutes.
*Served with brown rice.

Tortellini Soup
Prep: 5 Minutes / Cook: 15 Minutes
Ingredients— Olive oil, Minced garlic, Minced onion, Oregano, Vegetable broth, Whole tomatoes, Salt & Black pepper, Tortellini, Spinach
Add garlic and onion to large pot / add oregano, broth, tomatoes, salt and pepper / break up tomatoes in pot / bring soup to boil and add tortellini / add spinach 1 minute before tortellini is done / stir to combine / top with parmesan

Grilled Salad with Strawberry Reduction
Prep: 15 Minutes / Cook: 30 Minutes
Ingredients— 2 heads romaine (or any other) lettuce, 2 Tbl Olive Oil, 1 1/2 Cup Strawberries, 1 Cup Balsamic Vinegar, 1/4 Cups Sugar/Stevia
Boil balsamic vinegar, sugar and 1/2 cup strawberries and let it reduce by a third / drain vinegar and toss away strawberries / Drizzle lettuce with olive oil and grill without making it limp / Drizzle reduction on lettuce and top with remaining strawberries

Savoury Couscous
Ingredients— 1 Tbl butter, ½ cup carrot, 2 Tbl green onion, 1 cup mushrooms, 1 ¼ uncooked couscous, 2 cups broth, 1/3 cup pine nuts, 1 Tbl fresh basil, salt and pepper
Melt the butter in a pan over medium heat / Add the carrots, green onions and mushrooms, Sauté / Add the broth, bring the mixture to a boil / Stir in the dry couscous, cover with a lid and remove from heat / Let pan sit completely covered for 5 – 7 minutes / Sprinkle the pine nuts and basil
